Ever since I was little, I always talked about wanting to visit Italy. One of my favorite foods at the time was pizza, and I heard Italy had really good pizza. I got the opportunity to visit Italy 2 years ago. Although the pizza was delicious, it was another dish that really caught my attention: spaghetti Carbonara.
Who would've thought that mixing breakfast foods with pasta would turn out to be so delicious? We proceeded to order it at every single restaurant we visited over the course of the week. Al dente pasta, bacon, eggs, parmesan, fresh parsley, and lots of freshly ground black pepper just go perfect together.
And with just a few ingredients and 20 minutes, do yourself a favor and make this dish. It's the ultimate comfort food!
Ingredients:
-A little over 16 oz. spaghetti (you can substitute any other type of pasta)
-4 slices bacon, chopped (try freezing the bacon before you chop it-makes it easier!)
-3 eggs
-1/3 cup grated parmesan cheese
-2 tablespoons chopped fresh parsley
-Freshly ground black pepper
Directions:
1. Boil a large pot of salted water. Add the pasta and cook until al dente (according to package directions)
2. Meanwhile, cook the bacon in a large skillet over medium-high heat until crisp, about 8 minutes.
3. While the bacon is cooking, whisk the eggs and cheese in a large bowl.
4. Once the pasta is cooked and drained, add it to the skillet with the bacon. Pour in the sauce and stir everything together. Garnish with the fresh parsley. Enjoy! :)
